Happy Father’s Day!

Happy Father’s Day to my daddy Alan who led me to Jesus as we sat together in an orange recliner over twenty-five years ago. No gift could ever be as precious as that, but he has loved me every day of my life and showed it through actions and words. And sometimes by making fun of me.  Despite the loss of his own father as a young child he has been the ultimate example of a supportive and committed parent to his four children. He also loves his four grandchildren with the blinding light of a thousand suns.

Happy Father’s Day to the strong and godly men that have been a light in my life: Mr. Gerald who gave me a deeper understanding of God’s character than I ever had before and has always encouraged me. Mark, my father-in-law, who has shown me kindness since Day One and takes advantage of time with his grandchildren to really get to know them.

Happy Father’s Day to the amazing man who is father to my children: Craig Prescott I love you and praise God for your love for your family!

  • What was the moment of inspiration that motivated you to start your blog?

I guess it was a long time coming. I had blogged casually and sporadically but my mother always told me I should write professionally. Then a few of my friends really encouraged me to work on my own brand rather than just contributing to other blogs. Finally I reached the tipping point of motivation and confidence and took the leap.

  • What is your favorite post that you have written so far? Give us a link!

This is one of my favorite posts because it really takes me back to the chaos and craziness that was the first few years of parenting twins. It also reminds me of how much better things are now and that my current challenges will one day be funny memories (hopefully).

  • List a few of your favorite blogs.

  • What is your favorite thing about writing/blogging?

I love how writing clears my head and it just feels like what I am supposed to be doing. Also, I love knowing other folks are reading my thoughts! That’s a good feeling.

  • What goals do you have for your blog in the next year?

So many goals! I would like to figure out more about design and improve the flow of my blog. I really, really want to work on my photography and photo editing skills. I need to figure out my niche a little better.

  • If you could start another blog, what would the topic be?

Maybe a blog exclusively about twin stories and twin parenting tips! My problem is that my memory is so foggy about that exhausting time that I may not be able to remember any of my own tips!

  • What advice would you give other new bloggers?

I am not sure I should be giving advice yet, but one of the most important tips I have is to proofread your blog! Spelling mistakes can ruin a good post!

  • What are your hobbies other than blogging?

Do you count being woken up ridiculously early by the same kid every day and drinking way too much coffee to make it to sunrise? I also love crafts when I have the time and shopping whether I have time or not.

  • What is your favorite food?

Coffee is my favorite thing to consume, but if I have to pick food I would probably say cheesecake. With a cup of coffee.

  • And finally, what is one random thing about your life that you think your readers would like to know?

I have GAD (Generalized Anxiety Disorder). Rather than saying I have Anxiety, I like to call myself a worse-case-scenario enthusiast. If you would like me to provide you with a worse case scenario for any given situation, just email me. It’s a natural gift.

I am always early. I feel like folks may think this is because I am super uptight (and hey, I kind of am, see above). But I really just hate being stressed, and running late makes me stressed. I have found that I can avoid stress by always leaving early so that’s what I do. Since I leave early, I always arrive early.

I am not athletic at all. But I was a green belt in karate and I did once break a concrete block with my hand. I don’t really care about goals or baskets or points or teams, but kicking a guy in the crotch is very liberating.

Sorry. I see that I gave you three facts instead of ten. Over-sharer.

Ephesians 1 is what I am reflecting on for the month of June. I will never forget one of my dearest friends and teachers explaining how Ephesians 1 answers so many questions we may have as Christians. It’s important to understand that God’s ultimate goal is to glorify Himself….and if we can’t understand that or accept it we aren’t even beginning to grasp His Holiness. Last week our church had a message based on the passage and it has been on my heart all week.

Why am I here?  I exist to praise “His glorious grace” and point others towards that grace. When I forget that, I become dissatisfied and bitter. When I forget that, I find myself lost and afraid. When I forget that, I expect from others what I should be accepting from God’s open hand. When I re-align myself with Ephesians 1, I find clarity and peace.

Back to the Basics Summer Outfit

I’m playing with Polyvore collages today. Just picked a few things I love from Amazon (affiliate links). Summer Mom on the Go

 

I love long, drapey layers and the leggings and cardigan combo is my go-to for Fall. I’ve been looking for a comparable Spring and Summer look which led me to this light flowing grey vest. The black crops are my favorite brand, NYDJ and the plum Vera Bradley purse is my effort to limit the PATTERN mixing I am so prone to. Whatever you may say about Crocs, I can’t help but love the comfort and durability which is why I chose these cute wedges.

I know you have seen tassel necklaces all over pinterest just like I have. There is something about a long tassel necklace that is so flattering and can go with almost anything. I feel like they  simultaneously make me look taller and more sophisticated at the same time (maybe that’s just in my head though). Ice Cream for breakfast

My kids are pretty excited that I let them have Ice Cream for Breakfast. This is an incredibly easy and healthy recipe that really shows how powerful the Vitamix is. So healthy we can serve it at breakfast!

2 frozen bananas (for easy blending, slice and freeze for at least 30 minutes)

12 frozen strawberries

1/2 – 3/4 cup whole milk

1/2 tsp. of vanilla

Toss frozen bananas, then frozen strawberries into the Vitamix, then add 1/2 cup of milk. The trick is to use the tamper constantly to make this recipe. It will be loud and angry, but the results are yummy! Start blending low and then move up to high, constantly tamper-ing the contents down until you get a smooth creamy texture that can be scooped. (Add additional milk if needed).

May Favorites: All my favorites right now!

I seriously LOVE favorites lists. I love favorite baby products lists, favorite back to school lists, favorite cooking utensil lists, favorite recipe lists. No matter where I am reading, browsing, or scrolling, if I see “Favorites” I will stop immediately. I mean, if it’s your favorite, it might be my new “ISO”, and I love my ISO lists! (Check out my post here to learn how I use ISO lists to find awesome deals!)

Here’s my current Favorite list:

  • Salted Caramel Simply Bliss Creamer  I knew the moment I saw this flavor I would love it. Simply Bliss Salted Caramel Coffee Creamer is like a Starbucks Salted Caramel Frappachino, except better because you will be able to pronounce all the ingredients (NONFAT MILK, HEAVY CREAM, CANE SUGAR, NATURAL FLAVOR, SALT) and you can control the sweetness! Love it!
  • Not Your Daughter’s Jeans: do you know how you buy a pair of jeans and then you come home and sooner or later you realize you hate them? Yep, that’s the worst and that’s what happened pretty much every time I bought a pair of jeans UNTIL I discovered jean perfection in NYJD (Not Your Daughter’s Jeans). I have gotten mine from thrift stores, ebay, Nordstrom Rack and TJ Maxx. You can find them on Amazon also! They have the perfect stretch (without the dreaded waist gap), the perfect snug fit, and lots of great styles. I think I have about 10 pairs of NYDJ and I have been slowly replacing all my other pants. Warning: NYDJ takes vanity sizing to a new level. In NYDJ I wear a size 2, even though my typical size is closer to 6/8. Best part: NYDJ are made in the USA!
  • My new monogrammed Yeti Mug. Thank you Angie, I seriously love it! I have done so much better drinking my water this last week. Ice in the morning is still ice at night! It also keeps hot coffee hot even when I have added a unhealthy amount of that delicious salted caramel creamer. And the monogram is gorgeous!
  • The FastDiet. I am happy that I can succeed at this diet and for me it is totally sustainable. It gives slow and steady weight loss, and gives me back a sense of control over my eating habits. Check out my post on this way of living here.
  • My rescued window that my hubby painted for the mantel. I love it! Knowing how much my hubby hates home improvement projects makes me love it double!
  • Fixer Upper. I actually talked to a friend the other day who had never seen Fixer Upper with Chip and Joanna Gaines. How can this be? My entire family loves this show. My four year old actually asked if we could call Fixer Upper to help us with our mess of a house. (Joanna, if you want to fly out to the EC, we can give you a “fun” project).
  • Plant Therapy Essential Oils. I have just started dipping my toe into Essential Oils. For the last few months I have been reading about some of the science and safety and I am really impressed with Plant Therapy’s education, pricing, and business model.  We have only tried a few products but I am specifically really loving the Relax Synergy. I have been using it at night before bed and it’s definitely helping my stress levels!

How We Do Dinner Part 2

Welcome to my new blog, Chasing Santee! I’m working on the design bit by bit so thanks for your patience while my content has been on hold. I realized I was becoming more and more frustrated with blogging and that was because I hadn’t been writing as much, I had been researching and tweaking and transferring. But what I have re-discovered in 2016 is that I must write. It’s vital to my emotional health! So I am coming back to posting and trying to tie up the loose ends of some of my two part posts. So, without further ado, here is Part 2 of How We Do Dinner.

In Part 1, I talked about some of our quick meals. For this post, I’m linking to some of our current favorite recipes; some are new and some I have used for the last thirteen years! A few are just quick guidelines (I would like to update with full recipes later). We can really recommend these! (If you don’t have an Instant Pot, some of these may make you want one!)

  • Easy Cheesy Veggie Lasagna: Delicious and freezes great. We really like this better than traditional lasagna.
  • Salad for the win: Our favorite product from Sam’s Club is their huge tub of Organic Spring Mix.  We also grab the big bags of sliced almonds, craisins, crutons, and real bacon pieces. I used to make salads in bowls for each person, but I finally gave in and started tossing my salad together with dressing and tons of toppings in a big bowl. It is JUST BETTER, trust me. There are a million variations, obviously, but we have found keeping those ingredients available with different fruits and veggies means the salad actually gets served….and eaten, rather than languishing in the produce drawer. If some of the spring mix needs to be finished up, I throw it in the freezer for smoothies.
  • Balsamic Chicken Thighs: You will need an Instant Pot for this, but you will love the results. Tender, tangy and perfect with jasmine rice.
  • Wrap it: One of the fun things I realized when I worked at Tropical Smoothie was that almost anything makes an awesome wrap. Flour tortillas are cheap and last forever in the fridge, so I always stock up at Aldi. Try: Chicken salad with fresh spinach and onions, breakfast burritos, leftover turkey, cranberries & dressing (even gravy tastes delicious), and chicken Caesar salad.
  • Mac & Cheese: Ok, I have obviously shared this before, but it’s good enough to repeat. SO easy.
  • Oven Roasted Veggies: These easy instructions work for pretty much any veggies, and the olive oil and balsamic vinegar make them extra irresistible.
  • Healthy Chili: So easy the kids can make it!
  • Homemade pizza: We love the pizza dough sold in the Publix bakery cooler. This way you can really load up on the veggies and cut down on the grease.
  • Taco Soup: One can of chicken, one can of corn, one pack of taco seasoning, one pack of ranch dressing, one can of beans. Dump all together (no can-draining) in a pot,  bring to a boil and simmer for like 20 minutes. Awesome camping recipe! (I imagine….I have never slept outdoors in my life). Serve with chips, sour cream, and , of course, cheese.
  • Copycat Chick-fil-a Sandwiches: It’s fun to try copycat recipes and the pickle juice marinate and powder sugar in the breading bring this pretty close to the real thing. Honestly, we’d rather just go to Chick-fil-a but there is something empowering about re-creating a restaurant favorite!
  • Quick Chicken Pot Pie: Saute your chopped veggie trio (onions, carrots, celery), add some chicken broth and bring to a light boil, add a spoonful cornstarch and stir until thickened. Throw in a bunch of chopped cooked chicken (or make it easy on yourself and use a store-cooked rotisserie chicken. ) Season by preference. Pour it all into a crust (DIY or buy Pillsbury), top with a second crust and bake.
  • Beans & Rice: I have mentioned this recipe before because it is one of our favorites and it literally takes three minutes to throw in the Instant Pot.
  • Stir-Fry: A big bag of broccoli slaw from the grocery store makes the quickest stir fry ever. Throw in whatever veggies you have and lightly saute with EVOO. Add some rice or pasta and leftover pork or chicken. Don’t forget to serve with kid-friendly chopsticks! It makes the whole experience 10 times better (the rule is parents must eat with chopsticks also).
  • Cabbage & Buttered Noodles: This may not sound great, but trust me, served with savory kielbasa (we just buy these from Hillshire Farm) it’s a crowd-pleaser. This was a recipe we started making when we were over-run with cabbage from our CSA and we still love it!
  • Chicken Salad: Chopped Rotisserie chicken or canned chicken plus mayo, salt, pepper, & seasoned salt makes a great chicken salad. Add any of the following: chopped celery, craisins, raisins, grapes, chopped apples, or sliced almonds (again from Sam’s Club) and you’ve got an awesome meal.

So-Easy-the-Kids-Can-Make-it Chili

Even my nine year olds can handle this super easy, quick & delicious chili recipe. Pin it for an easy meal in only 20 minutes!v-8 chili

2 lbs. ground beef (or 1 lb ground beef plus 1 lb spicy sausage)

3 medium onions, chopped

3 tbls. chili powder

3 cups Spicy Vegetable Juice (V-8)

1/3 cup ketchup

2 cans beans (any combo of kidney, chili, garbanzo, white chili, etc.)

1 can corn (optional)

Bacon (ok, this is definitely optional, but if you don’t add it, you’ll wish you did)

Cook beef and onion at medium heat in the bottom of a dutch oven on the stove. Drain fat, then add chili powder (sometimes I throw in some extra seasoning like garlic, etc). Add the rest of the ingredients and bring to a boil. Turn down to low and cook for 15 minutes. This is another one of the most flexible recipes of all time (kind of like my Magic Oatmeal Cake). You can pretty much throw in any beans & meat and this is always a hit!

Just for Women: Part 2

I mentioned in Part 1 that I have become a loyal convert to reusable feminine care solutions. I am so much happier dealing with “that time of the month” since I switched from disposable products. My first menstrual cup was the Diva Cup and it was revolutionary for me. However, recently I have been searching for something that would work a little better for me, and I am excited to share about it now!

FemmyCycle was kind enough to send me a free reusable cup to test and honestly review. I did not receive any compensation for this review, nor did I commit to writing anything other than my honest opinion about the product. Luckily, my honest review turns out to be very positive!

Here’s why I was really excited to try the Femmy Cycle. It has the largest capacity of any cup I could find. Also, it comes in three different sizes which includes a low cervix version. Finally, it has a unique leak proof design that no other cup offers. A few other things that make it different from the others: it’s softer, cleaning instructions do not suggest boiling, and it’s suggested lifespan is only two years.

Down to the details:

Is it comfortable? YES. I found it more comfortable by far than others I have used.

Is it easy to use? After practice, sure. Like most products in this category, it does have a learning curve.

Is it effective? For me, VERY. Performance was better for me than anything else I have used. Keep in mind that every woman is different, so results may vary.

Does the spill-proof feature work? To my amazement, YES.

I really like the FemmyCycle and will continue using it. I do think that the design makes it a little trickier to learn for a first-timer, but I think it’s a great option for those who have trouble with other cups or just need better protection. I’m not sure why it would need to be replaced every two years, when other cups’ suggested life span are closer to a decade. It’s slightly pricey compared to other versions on the market, but most of us can overlook the cost which is minimal over the life of the product. Women should be aware of all their options, and FemmyCycle is a great one!
